What’s the best stainless steel for kitchen knives and can it be purchased in large sheets
Some of the best include but are not limited to, anything cpm like..... s30v, s35vn, 154. For less expensive but quality steels your looking at aeb-l, nitro v. You can grab any of these steels at NJ steel baron
That’d be aeb-l.
I really like AEB-L as well
A friend of mine, Adam at MKS, uses AEB-L with amazing results.
It’s all about the heat treat. Via Peter’s his knives are generally 60-61HRC
I pretty much strictly use AEB-L for almost all of my knives... it cannot be beat! I have used a little bit of Nitro-V and it took an amazing edge and it's stain resistance is through the roof. Cant go wrong with either.
